Why everyone keeps coming back.

Nestled in the heart of Silverthorne, Colorado, Sauce on the Blue is a captivating Italian restaurant that offers both a warm, inviting dining atmosphere and a menu rich with authentic flavors. This charming eatery excels not only as a go-to spot for exquisite Italian fare but also as a reliable banquet hall and takeout destination, making it a versatile choice for every occasion.

The cuisine here is deeply rooted in traditional Italian flavors, reimagined with a fresh, modern twist. Start your culinary journey with standout appetizers like the Fat Tony Four, featuring house-made meatballs crowned with shaved Parmesan and marinara—a rich, comforting classic that sings with savory goodness. For something to share, the Antipasto Platter brings an artful selection of artisan cured meats, cheeses, and crackers, perfectly balancing salty and creamy textures to whet your appetite. The Eggplant Tower Fritti layers eggplant, wild mushrooms, roasted peppers, and mozzarella in a delightful medley that’s both hearty and lighter on the palate.

When it comes to pizza, Sauce on the Blue shines with its thoughtfully crafted specialty pies. The Margherita pizza bursts with the bright acidity of seasonal tomatoes, aromatic basil, and creamy fresh mozzarella, all finished with a drizzle of garlic-infused olive oil and balsamic reduction for a perfect harmony of flavors. For those craving something earthy and tangy, the Organic Arugula pizza combines roasted tomatoes, goat cheese, and roasted red peppers atop a bed of fresh arugula and mozzarella—a unique twist that elevates every bite. Vegetarians will relish the Vegetariano, a colorful mosaic of red onions, mushrooms, black olives, and red peppers over a rich red sauce that satisfies without compromise.

The dinner entrees at Sauce on the Blue extend beyond pizza to contemporary Italian-inspired dishes that showcase Colorado’s best ingredients. The Rainbow Trout is elegantly prepared in a delicate white wine and cream caper sauce, served alongside baby spinach, creamy mashed potatoes, and fresh market vegetables—each component harmonizing into a dish that feels sophisticated yet approachable. For meat lovers, the Colorado Choice Lamb Sirloin is a standout, bathed in a luscious Cabernet demi-glace and paired with roasted garlic mashed potatoes and seasonal vegetables, creating a deep, savory experience. Meanwhile, the Chicken Marsala boasts tender chicken enveloped in a rich mushroom Marsala sauce, perfectly complemented by fettuccine and fresh veggies. And the Colorado Filet Mignon—a true indulgence—is served with the same decadent Cabernet demi-glace, marrying robust flavors with tender, juicy steak.

What truly sets Sauce on the Blue apart is its warm ambiance, effortlessly blending mountain charm with elegant touches. The space accommodates a generous number of guests, making it an excellent choice for group dinners or special occasions. Reviewers frequently highlight the friendly, knowledgeable staff and a convivial atmosphere enhanced by a full bar, including a remarkable selection of bourbons and hard ciders to elevate your dining experience. Regular happy hours, even on weekends until 4:30 p.m., add an inviting touch for those looking to enjoy great drinks alongside their meal.

Whether you're stopping in after a day of exploring Summit County or settling in for a memorable night out, Sauce on the Blue offers a genuine Silverthorne gem of a dining experience. From expertly crafted appetizers to house-favorite pizzas and hearty entrées, every bite tells a story of dedication, quality ingredients, and passionate Italian flavors.

For takeout customers, the restaurant proves just as reliable—quickly fulfilling orders that remain hot and fresh, ideal for enjoying in the comfort of your own space. While some have noted that certain sauces lean toward the classic and straightforward, the overall balance of imaginative menu options and attentive service keeps guests coming back time and again.

In sum, Sauce on the Blue is more than just a meal; it’s an invitation to savor hand-crafted Italian cuisine in a cozy yet sophisticated setting, perfectly suited for both casual nights and special celebrations in the stunning Rockies.

This restaurant has a lot of seating and the lady at the podium was really nice. The food was good but I can't say I was overly impressed with it. I placed a to go order. It came out quickly and was still pretty hot when I got back to my hotel. I really liked the tomatoes and spinach in the pasta but the sauce seemed pretty bland and basic for $30 plus tax. There was also nothing else included with it like bread or a small salad. I did ask for chicken to be added and I could tell it was fresh cooked chicken breast. But again, it didn't have a lot of flavor. I can't say that I would return if not for my company paying for it. I did really like their staff, though. Both ladies I talked with were very helpful and sweet.

Sauce on the Blue: A True Silverthorne Gem If you find yourself winding through Summit County looking for a dining experience that perfectly balances mountain charm with sophisticated flavors, look no further than Sauce on the Blue. Often described by locals as a "hidden gem," this spot manages to capture a specific kind of magic that many resort-town restaurants miss. Atmosphere & Vibe From the moment you walk in, the atmosphere sets the stage for a memorable evening. It strikes that elusive chord between upscale Italian bistro and cozy mountain lodge. Whether you’re seated in the warm, wood-accented dining room or out on the patio during the summer months, the vibe is consistently energetic yet intimate. The restaurant sits right along the Blue River, and the sound of the water provides a serene backdrop that makes you feel miles away from the hustle of the nearby shopping outlets. The Experience The service is attentive without being overbearing, contributing to the "neighborhood favorite" feel. It’s the kind of place where you feel just as comfortable celebrating an anniversary in a dress shirt as you do grabbing a post-skiing meal in your favorite sweater. Why It’s a Must-Visit What truly makes it a hidden gem is the consistency. While many tourist-heavy spots rely on their location, Sauce on the Blue relies on quality. The menu is a thoughtful tribute to Italian cuisine, but the great vibe is what keeps people coming back. It’s a place that feels like a secret you’re lucky to have been let in on—a warm, inviting sanctuary with a view that is second to none in Silverthorne. If you want a meal that feels like a destination in itself, this is it.

We enjoyed our meal at this nice sit-down Italian restaurant. I would especially recommend the fried calamari! It was crispy and well-seasoned and there was a lot of calamari. The service was friendly and the dining environment was nice too. They were super busy when we went!

Great Restaurant to eat, drink, and ENJOY in Silverthorn. If you like Brussel sprouts the appetizer is AMAZING and a Good portion size at that. The hard cider on the menu I had was good and they have a Huge FULL Bar ready to appease your adult beverage needs. The chicken Marsala my friend had looked Great and she says it was. I took off one little star and debated doing so because my gluten free pizza was Alright But Not Great. The sausage on it seemed a bit over cooked and the thin crust was a little charred. The chocolate dessert cake is rich and tasty, one sufficed for two people. Don't get me wrong on this critique, Sauce on the Blue is Good and worth the visit, so Go drink, eat, and ENJOY!!

Such a great food. My wife and I got Zuppa Di Giorno, Minestrone Penne a la Gorgonzola, House Sausage Pizza, cheese cake and Tiramisu all delicious all delicious. On the bad side, our waiter Brandon C. was rude and inattentive, not eye contact and threw things at our table. You can do better guys.

The food was good, our server was nice, but seemed to be quick to rush off elsewhere rather than talk to us too much, but it was a little busy so we understand. She checked on us and did her job perfectly so we're satisfied. I cant remember her name though. And the atmosphere was cozy and modern which I always appreciate a good atmosphere. I'd definitely come back if I lived in the area.

Great food and fantastic service. Our server, Shorty was super attentive and did a fabulous job. I had the spaghetti and meatballs and my wife had the crispy brussels sprouts and a cheese pizza. All were superb. Shorty recommended the house made tiramisu to finish it off and that turned out to be an excellent choice. Just a side note for the management-with the prices being what they are it would be nice if bread and butter was provided without having to pay extra for a bread basket. That being said, we had a great experience and look forward to our next visit.
